Try this shrimp-fried quinoa recipe for a quick, healthy, and flavorful meal! Packed with protein, veggies, and savory spices, it’s the perfect balance of nutrition and taste.


Ingredients

Scale
  • 12oz cooked shrimp
  • 2 cups cooked quinoa
  • 8oz frozen mixed vegetables (Carrots, corn, green beans, green peas)
  • 1/4 cup diced onion
  • 2 tbsp canola oil
  • 2 tbsp low sodium soy sauce
  • 1 tsp garlic powder
  • Salt to taste

*If desired, add chopped walnuts


Instructions

  1. In a large skillet or wok on medium-high heat, add canola oil. Once heated, add quinoa and onion. Toast for about 2 minutes while constantly tossing with a spatula or wooden spoon.
  2. Mix in frozen vegetables. Cook until lightly soft while gently stirring.
  3. Add soy sauce, garlic powder, and salt to taste.
  4. Lastly, toss in cooked shrimp and heat thoroughly. (Thaw and drain first if using frozen shrimp.)
