- 1 lb lean ground turkey
- 4 large bell peppers
- 1 cup cooked rice (white or brown)
- 16oz jar of chunky tomato sauce
- 1 tsp garlic powder
- 1/4 cup diced onion
- 1 Tbsp dried basil
- 1/2 Tbsp chili flakes
- Salt to taste
- 1 cup crumbled feta cheese
Instructions
- Preheat oven to 350 degrees Fahrenheit, bring a large pot of water to boil, and prepare an ice bath in a large bowl. (ice bath = 1/2 ice + 1/2 cold water)
- Cut off the tops of the bell peppers, remove the membrane and seeds from inside, and boil for 5 minutes. Remove peppers from boiling water and place them in an ice bath to stop the cooking process.
- Brown ground turkey and add diced onion. Cook until onions are slightly golden, then add tomato sauce, garlic powder, chili flakes, and basil. Heat thoroughly and add salt to taste.
- Mix in cooked rice.
- Stuff peppers with ground turkey and rice mixture. Place in oven-safe dish and cover tightly with foil.
- Cook for 15 minutes. Uncover, sprinkle with feta cheese, and cook uncovered for an additional 10 minutes or until peppers are tender.
