Ingredients

Scale
  • 1 lb (about 4 cups) cucumbers
  • 1 cup boiled edemame (soy beans)
  • 1/2 shredded carrots
  • 1 1/2 tablespoons low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame seeds
  • 1 teaspoon graded ginger
  • 1/8 teaspoon sea salt
  • 1 teaspoon honey

Optional

  • 1 teaspoon sriacha or chili paste for heat


Instructions

  1. Thinly slice cucumbers into round disks and add to a large serving bowl.
  2. Add all the other ingredients to the bowl and mix well. Taste test and add additional ingredients if desired. Then cover and refrigerate for up to 1 hour.
  3. Taste test again before serving and add ingredients if desired.
  4. Serve as a side or as a meal.

Optional

  • Add a carbohydrate like rice or baguette slices to complement.
