Ingredients

- 1 lb (about 4 cups) cucumbers
- 1 cup boiled edemame (soy beans)
- 1/2 shredded carrots
- 1 1/2 tablespoons low sodium soy sauce
- 1 tablespoon sesame oil
- 1/4 cup rice vinegar
- 2 tablespoons sesame seeds
- 1 teaspoon graded ginger
- 1/8 teaspoon sea salt
- 1 teaspoon honey
Optional
- 1 teaspoon sriacha or chili paste for heat
Instructions
- Thinly slice cucumbers into round disks and add to a large serving bowl.
- Add all the other ingredients to the bowl and mix well. Taste test and add additional ingredients if desired. Then cover and refrigerate for up to 1 hour.
- Taste test again before serving and add ingredients if desired.
- Serve as a side or as a meal.
Optional
- Add a carbohydrate like rice or baguette slices to complement.
