  • 1 cup vital wheat gluten (a high-protein flour alternative)
  • 1 cup garbanzo flour
  • 2 teaspoons stevia
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons dried cherries (can substitute dried fruit of choice)
  • 2/3 cup water
  • 1/3 cup applesauce
  • 1 teaspoon almond extract


Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, mix wheat gluten, garbanzo flour, stevia, baking powder, cinnamon, salt, and cherries.
  • Add in water, applesauce, and almond extract. Mix until a dough forms.
  • Separate the dough into four balls.
  • Roll the dough into logs and join the ends to form the bagel shape.
  • Bake for 20-25 minutes until slightly golden brown.
  • Allow bagels to cool for 5 minutes before cutting in half.
  • Top with cream cheese and jam or your favorite toppings
