Ingredients
- 1 lb chicken breast
- 4 tablespoons soy sauce
- 3 tablespoons of honey
- 3 teaspoons garlic, minced
- 2 teaspoons minced ginger
- 2 teaspoons sriracha
- 4 tablespoons lime juice
- 1/4 cup powdered peanut butter
- 1 tablespoon water
- 1 cup cabbage, chopped to strips
- 1 cup shredded carrots
- 1 cut bell pepper (any color)
- 10 Torilla’s (corn or flour)
- 1–3 tablespoons Cilantro (optional)
- 2 tablespoons crushed peanuts (optional)
Instructions
- Cut chicken breast into bite-sized pieces and place in a bowl with 3 tablespoons of soy sauce, 2 tablespoons of honey, 2 tsp garlic and ginger, 1 tsp sriracha sauce, and 3 tablespoons of lime juice. Let it marinate for 30 minutes or overnight for extra flavor.
- Mix the following ingredients: 1/4 cup peanut powder, 1 tablespoon soy sauce, 1 tablespoon honey, 1 tablespoon lime juice, 1 teaspoon garlic, 1 teaspoon sriracha, and 1 tablespoon water as needed. Set in the fridge until ready to use.
- Cook the chicken in a pan on medium heat until no longer pink.
- Assemble tacos with tortilla, chicken, cabbage, carrots, bell pepper, cilantro, crushed peanuts, and peanut sauce.
Notes
- If you prefer, you can substitute with powdered almond or cashew butter for the peanut butter.
