Pistachio Farro:
- 1 cup of Farro
- 1 cup of water
- 1 cup of broth
- 1 tsp balsamic vinegar
- 1 tbsp EVOO
- 1 tsp sea salt
- 1 tsp pepper
- 1/2 cup pistachios
Chicken Salad:
- 1 rotisserie chicken (4.5 lbs) -shredded
- 1.5 tbsp curry
- 1 cup mayo
- 2 celery stalks, chopped
- 1/3 cup cranberries
- 2 tbsp lime juice
- 1 tsp smoked paprika
- 10 oz mixed micro greens
Instructions
Pistachio Farro:
- In a large pot, combine the water and broth and bring it to
boil. - Add farro and cook according to package instructions
(about 10-15 minutes) to soft and tender. - Drain excess water from the cooked farro and in the
same pot, toss in balsamic vinegar, EVOO, and season with
salt and pepper. - Mix in the pistachios.
Chicken Salad:
- Add the shredded chicken, chopped celery and
cranberries to a large mixing bowl. - Stir the mayo, lime juice, curry powder and paprika and
add it to the chicken. - Combine all ingredients until all the mix is covered with
the seasoning. - Taste and adjust flavors.
Notes
To serve: Add a bed of micro greens, and on top place farro and chicken salad side by side, and enjoy!
The curry mix supports mental and cardiovascular health, while the Farro adds lots of fiber for
digestive health!
