- 1/2 cup white rice (uncooked)
- 1 cups water or chicken broth (for cooking rice)
Instructions
- Prepare the Rice: In a medium pot, bring 1 cup of water (or chicken broth) to a boil. Add the rice, a pinch of salt, and stir. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and all the liquid is absorbed. Fluff with a fork and set aside.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Brush the chicken breasts with Italian dressing. Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before chopping it into bite-sized pieces.
- Sauté the Vegetables: While the rice and chicken are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced green beans, bell pepper, and onion to the skillet.
