- 1 1/2 cup chopped fresh peaches
- 1 teaspoon sugar (if peaches are not ripe)
- 1/2 cup tiny mozzarella balls
- 3 tablespoons extra virgin olive oil
- 1 lemon juiced
- 1 1/2 tablespoons balsamic vinegar
- 1/2 teaspoon sea salt
- 1/8 teaspoon cracked pepper
- 1 tablespoon fresh basil
and/or
- 1 teaspoon fresh chopped mint
Instructions
- Chop peaches into small cubes and add to a small serving bowl. Do not refrigerate peaches because it makes them mealy.
- Squeeze lemon juice on peaches to keep them from browning. Add sugar if peaches are not ripe, and let stand for a few minutes.
- Mix together the rest of the ingredients, and let stand for a few minutes to allow flavors from the juices to combine.
- Serve as an appetizer alone, over a bed of lettuce as a salad, or top onto French baguette slices.
