A great Southern tradition – Georgia peaches with a little Italian twist. This refreshing recipe has healthy fats, lots of fiber, and a bit of cheesy fun!


Ingredients

  • 1 1/2 cup chopped fresh peaches
    • 1 teaspoon sugar (if peaches are not ripe)
  • 1/2 cup tiny mozzarella balls
  • 3 tablespoons extra virgin olive oil
  • 1 lemon juiced
  • 1 1/2 tablespoons balsamic vinegar
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon cracked pepper
  • 1 tablespoon fresh basil

and/or

  • 1 teaspoon fresh chopped mint


Instructions

  1. Chop peaches into small cubes and add to a small serving bowl. Do not refrigerate peaches because it makes them mealy.
  2. Squeeze lemon juice on peaches to keep them from browning. Add sugar if peaches are not ripe, and let stand for a few minutes.
  3. Mix together the rest of the ingredients, and let stand for a few minutes to allow flavors from the juices to combine.
  4. Serve as an appetizer alone, over a bed of lettuce as a salad, or top onto French baguette slices.
