Ingredients
- 2/3 cup plain low-fat Greek yogurt
- 2 oz smoked salmon, torn into pieces
- 1/2 avocado, diced
- 1 small cucumber, thinly sliced
- 1 Tbsp capers
- Fresh dill, chopped
- Drizzle of extra virgin olive oil
- Black pepper
Instructions
- Layer yogurt, salmon, avocado, and cucumber in a glass or bowl or cup.
- Top with capers, dill, and a drizzle of EVOO (extra virgin olive oil).
- Sprinkle with black pepper and serve as a protein-rich breakfast or light lunch.
- Feel free to put a small sprig of dill for garnish.
