Ingredients
- 3–4 oz cod pieces
- 8 trimmed asparagus spears
- 2 small red potatoes
- Salt and pepper to taste
- 1 teaspoon garlic
- 1 lemon sliced
Instructions
- Preheat the oven to 400°F
- Cut the foil to approximately 12 inches long
- Cut potatoes to ¼ inch thick and place in the center of the foil.
- Place the cod on top of the potatoes
- Add in the asparagus spears.
- Season with salt and pepper.
- Add garlic and lemon to the top of the cod.
- Seal the foil packet leaving a little pocket on top (like a tipi) and place it on a baking sheet.
- Baked for 20-25 minutes. Be careful not to over cook, and test by forking the potatoes – if soft, you’re done.
- Serve on a plate or eat directly from the foil packet.
Notes
- Exchange white potatoes vs red potatoes – but leave the skin on for that extra punch of fiber.
- Replace asparagus with broccoli or cauliflower or your choice of veggie, but something hardy that can stand to cook for a bit.
