For the Chicken Marinade:

  • 1 1/2 pounds boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • Salt to taste

For the Fajitas:

  • 1 large onion, sliced
  • 1 bell pepper (any color), sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons olive oil (for cooking)
  • Salt and pepper to taste

To Serve:

  • Warm flour tortillas (or corn tortillas for gluten-free)
  • Fresh cilantro, chopped (optional)
  • Lime wedges (for squeezing)
  • Sour cream (optional)
  • Shredded cheese (optional)
  • Salsa or pico de gallo (optional)
  • Guacamole (optional)


Instructions

  1. Marinate the Chicken:
    • In a bowl, combine olive oil, lime juice, soy sauce, ground cumin, chili powder, paprika, garlic powder, onion powder, black pepper, and cayenne pepper (if using). Whisk together to make the marinade.
    • Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours) to allow the chicken to absorb the flavors.
  2. Cook the Chicken:
    • Heat a large skillet or grill pan over medium-high heat. Drizzle with olive oil.
    • Remove the chicken from the marinade (discard the marinade) and cook the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C). Once the chicken is cooked through, remove it from the pan and let it rest for a few minutes before slicing it into thin strips against the grain.
  3. Cook the Vegetables:
    • In the same skillet, add the sliced onion and bell peppers. Drizzle with a little more olive oil and season with salt and pepper. Sauté over medium heat for about 5-7 minutes, or until the vegetables are tender and slightly charred.
  4. Assemble the Fajitas:
    • Warm your tortillas in a dry skillet or microwave. To serve, place the sliced chicken and sautéed vegetables on the tortillas. Garnish with fresh cilantro, a squeeze of lime, and any other toppings you like such as sour cream, cheese, salsa, or guacamole.

Notes

Protein Options: Substitute the chicken with flank or skirt steak, shrimp, or tofu! The steak and tofu cook like you did for the chicken. Be careful with the shrimp, it cooks quickly, so sauté them for just 2-3 minutes on each side until pink and opaque.

Add More Veggies: You can amp up the veggie content by adding zucchini, corn, or jalapeños to the fajita mix. These add texture, color, and more flavor. For a bit of sweetness, add sliced mango or pineapple to the fajitas for a tropical twist.

Toppings Variations: Go for shredded cheddar, Monterey Jack, or queso fresco for a cheesy addition. Make your own guacamole or top with avocado slices for a creamy touch. For a cooler contrast to the heat, use sour cream or Greek yogurt. Or add a fresh, tangy element with pico de gallo or your favorite salsa.
