Ingredients
- 8 large Medjool dates
- 1/4 cup peanut butter (smooth or crunchy)
- 2 oz dark chocolate (or milk chocolate), chopped OR 1/4 c semisweet morsels
- A pinch of sea salt (optional)
Instructions
- Prepare the Dates: Slice the dates lengthwise and remove the pits. You’ll be stuffing them later, so be sure to leave a nice cavity for the filling.
- Fill with Peanut Butter: Spoon about 1 teaspoon of peanut butter into each date, pressing it gently into the cavity where the pit was removed.
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate in 20-30 second intervals, stirring in between until completely smooth. Alternatively, melt the chocolate using a double boiler.
- Coat the Dates: Dip each stuffed date halfway into the melted chocolate, letting any excess drip off. You can also drizzle the chocolate over the dates if you prefer.
- Optional: Sprinkle with Sea Salt: For an extra flavor boost, sprinkle a tiny pinch of sea salt on top of each chocolate-coated date.
- Chill and Enjoy: Place the dates on a parchment-lined tray and refrigerate for about 10-15 minutes, or until the chocolate sets. Enjoy immediately or store in an airtight container in the fridge for up to a week.
