Ingredients

Scale
  • 1 lb ground turkey
  • 1 cup of broth
  • 1 can (15oz) black beans
  • 1 can (15oz) kidney beans
  • 1 can (28oz) crushed tomatoes
  • 1 cup corn
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 Tbsp EVOO
  • 4 Tbsp taco seasoning
  • 2 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp adobo
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 Tbsp honey


Instructions

  • Add 2 Tbsp olive oil to medium hot deep skillet, clay
    pot, deep electric skillet, or slow cooker, add onions
    Stir and cook for 4-5 minutes. Avoid burning. Then
    mix in ground turkey and stir until meat browns,
    about 4-5 minutes.
  • Add the additional 2 Tbsp olive oil along with garlic,
    taco seasoning, paprika, chili powder, cumin, adobo,
    sea salt, black pepper, honey, and stir well for
    another 1-2 minutes.
  • Combine the remaining ingredients (beans, corn,
  • tomatoes, broth) and boil for 1-2 minutes.
    Then lower heat to simmer for 15 minutes, stiring
    and taste test often.
  • Serve in a small bowl; sprinkle chopped cilantro,
    add avocado and shredded cheese as desired. Use
    corn chips for dipping.
