- 1 lb ground turkey
- 1 cup of broth
- 1 can (15oz) black beans
- 1 can (15oz) kidney beans
- 1 can (28oz) crushed tomatoes
- 1 cup corn
- 1 onion chopped
- 2 cloves garlic minced
- 4 Tbsp EVOO
- 4 Tbsp taco seasoning
- 2 tsp paprika
- 1/2 tsp chili powder
- 1 tsp cumin
- 1 tsp adobo
- 1 tsp sea salt
- 1 tsp black pepper
- 1 Tbsp honey
Instructions
- Add 2 Tbsp olive oil to medium hot deep skillet, clay
pot, deep electric skillet, or slow cooker, add onions
Stir and cook for 4-5 minutes. Avoid burning. Then
mix in ground turkey and stir until meat browns,
about 4-5 minutes.
- Add the additional 2 Tbsp olive oil along with garlic,
taco seasoning, paprika, chili powder, cumin, adobo,
sea salt, black pepper, honey, and stir well for
another 1-2 minutes.
- Combine the remaining ingredients (beans, corn,
- tomatoes, broth) and boil for 1-2 minutes.
Then lower heat to simmer for 15 minutes, stiring
and taste test often.
- Serve in a small bowl; sprinkle chopped cilantro,
add avocado and shredded cheese as desired. Use
corn chips for dipping.
