- 1 cup small cubed watermelon
- 1 can, low-sodium, rinsed chickpeas
- 1/4 cup feta cheese crumbles
- 1/4 cup extra virgin olive oil
- 1 lime juiced
- 1 tablespoon apple cider vinegar
- 1 teaspoon chopped mint
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground black pepper
Instructions
- Chop the watermelon into small 1/2
inch cubes or balls and place
into a large serving bowl. - In a colander, rinse one can of
chickpeas over cold water, just
enough to remove any juice and
add to the watermelon bowl. - Mix together the remaining
ingredients and stir well. - Serve alone as a side or meal.
