Description

Ingredients

Scale
  • 1 cup small cubed watermelon
  • 1 can, low-sodium, rinsed chickpeas
  • 1/4 cup feta cheese crumbles
  • 1/4 cup extra virgin olive oil
  • 1 lime juiced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chopped mint
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground black pepper


Instructions

  1. Chop the watermelon into small 1/2
    inch cubes or balls and place
    into a large serving bowl.
  2. In a colander, rinse one can of
    chickpeas over cold water, just
    enough to remove any juice and
    add to the watermelon bowl.
  3. Mix together the remaining
    ingredients and stir well.
  4. Serve alone as a side or meal.
