Ingredients

  • 8 oz pasta
  • (about 2 cups)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Optional Ingredients:

  • 1/4 cup red onion, thinly sliced
  • Fresh basil or parsley, chopped


Instructions

  • Cook the Pasta: Cook the pasta according to package instructions. Once cooked, drain and set aside to cool slightly.
  • Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  • Assemble the Salad: In a large bowl, combine the cooked pasta, diced avocado, halved cherry tomatoes, and red onion (if using).
  • Toss and Serve: Pour the dressing over the pasta mixture and toss gently to coat everything evenly. Garnish with fresh herbs like basil or parsley if desired.
