Description
A great way to get fresh zucchini, and best part is no cooking required. One zucchini will yield about 10-15 good strips to roll that tomato, goat cheese or hummus. The Zucchini Roll-Up can be used as an appetizer for guests at your next get-together or party, or you can add them to your lunch box, throw in some whole-wheat crackers, and a fruit, and call it a meatless lunch option. Super healthy and easy to put together. Enjoy!
Ingredients
- 1 whole zucchini
- ¼ cup goat cheese (or sub with hummus)
- ½ cup cherry tomatoes
- ¼ cup extra virgin olive oil,
- ¼ cup honey
- Sprinkle salt and pepper
Instructions
- Cut the ends of the zucchini, then use a potato peeler to slice lengthwise long and thin strips of zucchini to roll (like lasagna noodles).
- Spread about 1tsp of goat cheese (or low-fat cream cheese) along each zucchini strip
- Slice cherry tomatoes in half, and place one half on each zucchini with goat cheese spread
- Tightly roll the zucchini around the cheery tomato half and spear a toothpick directly through the middle to hold.
- Sprinkle just a small amount of sea salt and pepper, and drizzle lightly with honey.
