Description

A great way to get fresh zucchini, and best part is no cooking required. One zucchini will yield about 10-15 good strips to roll that tomato, goat cheese or hummus. The Zucchini Roll-Up can be used as an appetizer for guests at your next get-together or party, or you can add them to your lunch box, throw in some whole-wheat crackers, and a fruit, and call it a meatless lunch option. Super healthy and easy to put together. Enjoy!


Ingredients

Scale
  • 1 whole zucchini
  • ¼ cup goat cheese (or sub with hummus)
  • ½ cup cherry tomatoes
  • ¼ cup extra virgin olive oil,
  • ¼ cup honey
  • Sprinkle salt and pepper


Instructions

  1.  Cut the ends of the zucchini, then use a potato peeler to slice lengthwise long and thin strips of zucchini to roll (like lasagna noodles).
  2. Spread about 1tsp of goat cheese (or low-fat cream cheese) along each zucchini strip
  3. Slice cherry tomatoes in half, and place one half on each zucchini with goat cheese spread
  4. Tightly roll the zucchini around the cheery tomato half and spear a toothpick directly through the middle to hold.
  5. Sprinkle just a small amount of sea salt and pepper, and drizzle lightly with honey.
