Ingredients
Quesadilla
- 1 whole wheat tortilla
- 1/2 cup cooked chicken breast (grilled and pre-cooked, diced)
- 1/4 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup mixed vegetables (bell peppers, spinach, onions, mushrooms)
- 1–2 tbsp plain Greek yogurt (optional)
- 1 tsp vegetable oil or cooking spray
Creamy Lime Dip
- 1/2 cup plain Greek yogurt
- 1 tbsp salsa
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat a pan over medium heat and add olive oil or cooking spray.
- Sauté vegetables until softened, about 3–5 minutes.
- Add cooked chicken and heat through.
- Place mixture on one half of the tortilla and sprinkle with cheese.
- Fold tortilla over and cook 2–3 minutes per side until golden and crispy.
- In a small bowl, mix together all Creamy Lime Dip ingredients until smooth.
- Slice quesadilla and serve with yogurt dip. Enjoy!
