Ingredients

Quesadilla

  • 1 whole wheat tortilla
  • 1/2 cup cooked chicken breast (grilled and pre-cooked, diced)
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup mixed vegetables (bell peppers, spinach, onions, mushrooms)
  • 12 tbsp plain Greek yogurt (optional)
  • 1 tsp vegetable oil or cooking spray

Creamy Lime Dip

  • 1/2 cup plain Greek yogurt
  • 1 tbsp salsa
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  • Heat a pan over medium heat and add olive oil or cooking spray.
  • Sauté vegetables until softened, about 3–5 minutes.
  • Add cooked chicken and heat through.
  • Place mixture on one half of the tortilla and sprinkle with cheese.
  • Fold tortilla over and cook 2–3 minutes per side until golden and crispy.
  • In a small bowl, mix together all Creamy Lime Dip ingredients until smooth.
  • Slice quesadilla and serve with yogurt dip. Enjoy!
