Ingredients
For the Crust
- 1 medium cauliflower, broken into florets
- 1/3 cup shredded mozzarella
- 1/3 cup grated Parmesan cheese
- 2 eggs, lightly beaten
- 2 tbsp chopped fresh oregano (or 1 tsp dried oregano)
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
For the Toppings
- 1/2 cup BBQ sauce (low-sugar if preferred)
- 8 oz cooked chicken breast, shredded
- 1/2 cup shredded mozzarella
- 1/2 small red onion, thinly sliced
- 1/2 cup diced red bell pepper
- 2 tbsp chopped fresh cilantro (for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a 12-inch pizza baking tray with parchment paper.
- Place cauliflower florets in a food processor and pulse until it resembles a fine meal. Transfer to a large bowl.
- Add shredded mozzarella, parmesan, eggs, oregano, salt, and pepper to the cauliflower. Mix thoroughly until well combined.
- Form the mixture into a ½-inch-thick circle on the prepared baking tray, making sure edges are thicker than the center. Note: This cauliflower dough is delicate and won’t behave like regular dough. Handle gently—it will crisp as it bakes!
- Bake the crust at 425°F for 20–25 minutes, until golden brown on the edges.
- Remove from the oven and spread BBQ sauce evenly over the crust. Top with shredded chicken, shredded mozzarella, red onion, and red bell pepper. Note: You can use pre-cooked shredded chicken from the store, rotisserie chicken, or make your own by cooking chicken breasts or thighs and shredding them with two forks.
- Return to the oven and bake an additional 10 minutes, until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before slicing and serving.
