Fruit & Nut Curry Chicken Salad
Description
This Fruit & Nut Curry Chicken Salad recipe combines juicy fruits, crunchy nuts, and savory curry for a unique, flavorful dish. A healthy, protein-packed option perfect for lunch or dinner!
Ingredients
- 2 cups cooked, shredded chicken
- 1/2 cup fat free Mayo
- 1/2 cup Greek yogurt
- 3/4 cup Granny Smith apples
- 3/4 cup dried fruit and nut trail mix (of your choice)
- 2 celery ribs (2/3 cups), diced
- 2 tbsp chopped tarragon
- 2 tbsp lemon juice
- 1 Tbsp Curry powder
- Salt and pepper to taste
Instructions
- If necessary, cook (bake, boil, grill) chicken to an internal temperature of 165 degrees Fahrenheit and set aside. Shred cooled chicken and place in a large mixing bowl.
- Dice and chop apples, celery, and tarragon, if necessary, and add to the bowl, along with the remaining ingredients—season with salt and pepper to taste.
- Mix until well combined and chill in the refrigerator until ready to serve.
Notes
Curry powder helps promote digestive health and contains curcumin!
