This Fruit & Nut Curry Chicken Salad recipe combines juicy fruits, crunchy nuts, and savory curry for a unique, flavorful dish. A healthy, protein-packed option perfect for lunch or dinner!


Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1/2 cup fat free Mayo
  • 1/2 cup Greek yogurt
  • 3/4 cup Granny Smith apples
  • 3/4 cup dried fruit and nut trail mix (of your choice)
  • 2 celery ribs (2/3 cups), diced
  • 2 tbsp chopped tarragon
  • 2 tbsp lemon juice
  • 1 Tbsp Curry powder
  • Salt and pepper to taste


Instructions

  1. If necessary, cook (bake, boil, grill) chicken to an internal temperature of 165 degrees Fahrenheit and set aside. Shred cooled chicken and place in a large mixing bowl.
  2. Dice and chop apples, celery, and tarragon, if necessary, and add to the bowl, along with the remaining ingredients—season with salt and pepper to taste.
  3. Mix until well combined and chill in the refrigerator until ready to serve.

Notes

Curry powder helps promote digestive health and contains curcumin!
