Description

BLACK BEAN BURGER I love a great burger from time to time, but I do need to watch my cholesterol. It’s in my genes and too much saturated fat from beef or cheese can lead me down a difficult path. Look, I’m not trying to fool those that want a great burger, I say enjoy it every once in a while, but have a bean burger recipe on hand as a nice alternative. Although I love using my grill in the summer, let’s admit it’s hot, and after a long day at the office, I like to make cooking as easy as possible. So, why not be healthy too? I love this recipe because I can have it with or without a bun, with a delicious salad on the side, and can still add the cheese as well. Hope you enjoy it!


Ingredients

  • 1 can low sodium black beans
  • ½ cup pineapple salsa (or other)
  • ½ cup crushed corn chips (about 56 chips)
  • 1/8 cup chopped walnuts (about 2 Tbsp)
  • 1 tsp ground cumin
  • 1 egg and 1 white
  • 1 Tbsp canola oil (plus 1tsp for extra)

Instructions

First empty the beans into a colander and rise under water for about 30 seconds to rinse off excess sodium (30sec reduces about 40% sodium). Add about ½ the can of beans to a large mixing bowl and save the other beans in the colander for later. Use a food processor or fork to process the beans until desired smoothness. Hand-crush the walnuts and corn chips into the bean mix, add the egg or egg white, salsa, cumin, and mixed thoroughly. Add in the rest of the beans and mixed to desired smoothness (add some whole beans for a bit more of a bite). Take about a small handful (about 2in think) and make a small patty. Add canola oil to a medium heat flat pan, and pan fry until lightly brown/crisp on one side (about 3-4 minutes). Turn to other side and add 1tsp if necessary. Server warm with or without buns. Makes about 4 patties.
