Shrimp Fried Quinoa

Try this shrimp-fried quinoa recipe for a quick, healthy, and flavorful meal! Packed with protein, veggies, and savory spices, it’s the perfect balance of nutrition and taste.
Ingredients
- 12oz cooked shrimp
- 2 cups cooked quinoa
- 8oz frozen mixed vegetables (Carrots, corn, green beans, green peas)
- 1/4 cup diced onion
- 2 tbsp canola oil
- 2 tbsp low sodium soy sauce
- 1 tsp garlic powder
- Salt to taste
*If desired, add chopped walnuts
Instructions
- In a large skillet or wok on medium-high heat, add canola oil. Once heated, add quinoa and onion. Toast for about 2 minutes while constantly tossing with a spatula or wooden spoon.
- Mix in frozen vegetables. Cook until lightly soft while gently stirring.
- Add soy sauce, garlic powder, and salt to taste.
- Lastly, toss in cooked shrimp and heat thoroughly. (Thaw and drain first if using frozen shrimp.)
Notes
Quinoa is a good source of plant protein and fiber!
