Description

This flavorful Asian-inspired Crispy Stir Fry Skillet blends crispy potatoes with sautéed bell peppers, scallions, and garlicky sausage, all seasoned with sesame oil and soy sauce, then topped with a jammy or crispy egg. It’s hearty, savory, and layered with umami—like your favorite stir-fry and breakfast hash had a delicious fusion moment.

Ingredients

Scale

1 tablespoon neutral oil (like avocado or vegetable)

1 cup frozen cubed potatoes of choice

1 clove garlic, minced

1 small bell pepper, diced

2 scallions, sliced (white and green parts separated)

2 cooked chicken sausages, sliced (or use tofu cubes for a vegetarian version)

1 tablespoon low-sodium soy sauce

1 teaspoon toasted sesame oil

2 large eggs

Salt and pepper, to taste (if you have high blood pressure, use pepper only)

Optional toppings: sriracha, sesame seeds, furikake, cilantro, or kimchi


Instructions

  • Follow instructions on bag for cooking potatoes.  Cook until golden and crispy. Season lightly with salt and pepper.
  • Heat 1 tbsp of oil on medium heat and cook bell pepper, garlic, and white parts of the scallions for 2–3 minutes until softened. Add cooked potatoes.
  • Stir in sliced sausage and cook until heated through. Drizzle with soy sauce and sesame oil; toss everything together to coat evenly.
  • In a separate small pan (or clear a space in the skillet), cook eggs to your preference—crispy-bottomed or soft and runny.
  • Divide the hash into bowls or plates, top each with an egg, and finish with scallion greens, sesame seeds, and sriracha if desired.

Notes

  • Sausage Swap: Use chopped Chinese sausage (lap cheong) or a crumbled plant-based version for variety.
  • Add Heat: Drizzle with chili crisp or serve with kimchi on the side for a spicy kick.
  • Extra Flavor: Finish with a splash of rice vinegar or lime juice to brighten the dish.
  • Vegetarian Version: Use tofu or tempeh and add a splash of hoisin or tamari for umami.
