Ingredients
- 19oz can chickpeas, drained and smashed
- 1 small zucchini, grated
- 1/2 red onion, chopped
- 3 tablespoons fresh chopped cilantro
- 1 tablespoon sriracha (add less if you prefer less spicy)
- 2 tablespoons peanut butter (helps with binding)
- 1 teaspoon garlic
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 2 teaspoons pepper
- 3 tablespoons vinegar
- 2 tablespoons olive oil
- 1 cup quick cooking oats (helps with binding)
Instructions
- Drain and rinse chickpeas, place in a bowl, and smash with a fork or very lightly pulse in a blender leaving chunks of chickpeas. Be careful not to blend into a paste otherwise burgers will fall apart.
- Add all remaining ingredients to the bowl and mix well.
- Using your hands, shape the mixture into 6-8 patties
- Cook on a grill at 400°F for 10 minutes per side (best to use a grilling basket to avoid patties falling apart or sticking to the grates). Or, it’s actually best to heat oil in a pan over medium heat and cook burgers 5 minutes per side until browned and firm. The burgers can also be baked at 400°F for 20-30 minutes, flipping halfway through.
- Serve on a toasted bun with lettuce, tomato, onion, and spicy mayo.

- This can be made ahead and frozen for up to 2-3 months.
