Description

Fresh, creamy, and packed with protein — this Savory Yogurt & Smoked Salmon Parfait is a quick way to elevate your breakfast or lunch with Mediterranean flair.


Ingredients

Scale
  • 2/3 cup plain low-fat Greek yogurt
  • 2 oz smoked salmon, torn into pieces
  • 1/2 avocado, diced
  • 1 small cucumber, thinly sliced
  • 1 Tbsp capers
  • Fresh dill, chopped
  • Drizzle of extra virgin olive oil
  • Black pepper


Instructions

  1. Layer yogurt, salmon, avocado, and cucumber in a glass or bowl or cup.
  2. Top with capers, dill, and a drizzle of EVOO (extra virgin olive oil). 
  3. Sprinkle with black pepper and serve as a protein-rich breakfast or light lunch.
  4. Feel free to put a small sprig of dill for garnish.
