Ingredients
- 1 cup vital wheat gluten (a high-protein flour alternative)
- 1 cup garbanzo flour
- 2 teaspoons stevia
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons dried cherries (can substitute dried fruit of choice)
- 2/3 cup water
- 1/3 cup applesauce
- 1 teaspoon almond extract
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix wheat gluten, garbanzo flour, stevia, baking powder, cinnamon, salt, and cherries.
- Add in water, applesauce, and almond extract. Mix until a dough forms.
- Separate the dough into four balls.
- Roll the dough into logs and join the ends to form the bagel shape.
- Bake for 20-25 minutes until slightly golden brown.
- Allow bagels to cool for 5 minutes before cutting in half.
- Top with cream cheese and jam or your favorite toppings
